Toma is a semi-soft washed-rind tomme with tasting notes of lemon, yogurt, and cooked cream, plus aromas of an endless variety of seasonal fruits and vegetables. It’s equally at home on a cheese plate or in your kitchen.

From fancy cheese plates to fondue to burgers, Toma can do it all! This semi-soft washed-rind tomme is a stellar melter like Raclette, yet it has enough farmstead flavor to shine all on its own. We typically taste notes of lemon, yogurt, almond, cooked cream, and various fruity and vegetal flavors that change from batch to batch. The rind often has a distinctly briny river stone aroma. Try melting Toma under your broiler or in a cast iron pan (or in a Raclette machine, if you are lucky enough to own one!) and scraping it over potatoes, cornichons, and sausages. You won’t be disappointed.

Storage

Store wrapped in cheese paper in a humid part of your refrigerator, such as the crisper drawer. Mold growth is natural and safe, but you can wipe it off of the rind with a paper towel or some cheesecloth and a little salty water if it bothers you.
